Zucchini Bread
Serves: Makes one loaf | Prep: 10 min | Cook: 50 min
Ingredients:
Zucchini Bread:
2 zucchinis/courgettes, shreeded
3/4 cup sugar
1/4 cup vegetable oil
1 egg, beaten
1/4 tsp lemon zest
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
Directions:
Preheat oven 350F/180C. Grease or line a loaf tin.
In a bowl combine flour, baking soda, powder, cinnamon, nutmeg and salt.
In another bowl add zucchini, sugar, oil, egg and lemon zest. Mix well with a wooden spoon.
Add dry ingredients into the wet ingredients, mix until combined.
Spoon batter into the prepared loaf tin, bake 50-60 minutes, or until a toothpick near the center of the bread comes out clean. Let cool on a wire rack before slicing.
Recipe can be doubled, bread can be frozen.
