Sloppy Joes
Serves: Four | Prep: 10 min | Cook: 20 min
Ingredients:
Sloppy Joes:
1 Tbsp olive oil
1 onion, finely chopped
1 small green bell pepper, finely chopped
1/2 tsp jalapeno pepper, minced
1 lb ground beef
2 garlic cloves, minced
1 carrot, peeled and shredded
2 Tbsp tomato paste
1/2 cup ketchup
1/3 cup water
1 tsp light brown sugar
1 tsp yellow mustard
1/2 tsp worcestershire sauce
1/2 tsp salt
1/4 tsp pepper
dash of hot sauce
4 burger buns
1 1/2 cups cheddar cheese, shredded
sliced pickles
Directions:
Preheat oven 400F/200C.
In a skillet heat oil over medium heat. Add onions, bell pepper, and jalapeno, cook 3-5 minutes, until soft. Add beef and garlic, cook 5-7 minutes, until beef is no longer pink. Add tomato paste and carrot, stir well. Add ketchup, water, brown sugar, mustard, worcestershire sauce, salt, pepper and hot sauce. Stir to combine, lower heat and simmer, 10-12 minutes, until the mixture thickens.
While simmering, slice burger buns in half, top one half of the bun with cheddar cheese, place both halves in the oven and bake 6-8 minutes, until bubbling and toasted.
Place beef mixture on top of the toasted bun and add pickles.
