Apple Tart & Apple Pie Martini

Ingredients:
Apple Tart:
Dough:
2 1/2 cups all-purpose flour
1/2 tsp salt
1 cup cold butter, cubed
1/2 cup cold water
Filling:
2 lbs apples, peeled, cored and thinly sliced
1 tsp lemon zest
3/4 cup sugar, depending on tartness/sweetness of the apples
2 Tbsp milk
2 Tbsp sugar
Apple Pie Martini:
1 lemon wedge
1 Tbsp dark brown sugar
1 tsp cinnamon
2 oz Apple Cider
2 oz vodka
1 oz sour apple schnapps
Garnish:
Cinnamon sticks
Apple slices
Directions:
Dough:
Preheat oven 350F/180C.
In a food processor add flour and salt, blitz to combine. Add butter and pulse until the mixture comes together and resemble crumbs. With the motor running add 1/4 cup water, then 1 Tablespoon at a time, until the dough comes together and forms a ball.
Turn the dough out onto a floured work surface, cut in half and roll out one half to fit a 9-inch pie dish. Place rolled dough into the bottom of the pie dish.
Filling:
In a large bowl add apples, lemon zest, and sugar. Mix until combined. Transfer into the dough lined pie dish.
On a floured work surface roll out second dough. Place on top, cut off any overhanging dough. Crimp edges with a fork and cut three slits into the top.
Brush milk all over the top of the dough and sprinkle with sugar. Bake, 40-60 minutes, until crust is golden brown. Let cool at least 30 minutes before slicing. Serve room temperature with ice cream, custard, cream.
Apple Pie Martini:
Place brown sugar and cinnamon onto a flat plate. Rub the rim of the glass with a lemon wedge, dip the rim into the sugar mixture.
In a cocktail shaker filled with ice add apple cider, vodka and apple schnapps. Shake vigorously. Pour into the prepared glass and garnish.
