Blueberry Basil Mint Whipped Brie Cheese Crostini & Basil Mint Cocktail

Ingredients:
Blueberry Basil Mint Whipped Brie Crostini:
12-15 Crostini
2 8oz wheels of brie
2 cups fresh blueberries
2 Tbsp fresh basil, chopped
1 Tbsp fresh mint, chopped
1 tsp lemon zest
1/2 lemon, juiced
honey
coarse salt
Blueberry Basil Mint Cocktail:
1/2 cup fresh blueberries
4-5 fresh basil leaves
2-3 fresh mint sprigs
4 oz vodka
2 oz freshly squeezed lemon juice
2 tsp honey (optional)
soda water
Garnish:
Lemon Slices
Fresh Mint Sprig
Fresh Blueberries
Directions:
Blueberry Basil Mint Whipped Brie Cheese Crostini:
Remove rind from both brie wheels. Best do this when the brie is straight from the refrigerator and cut rind off with a serrated knife. Cut into cubes, place into a food processor, until room temperature. Blend in the food processor, 5-8 minutes, until smooth.
In a bowl add blueberries, basil, mint, lemon zest, and juice. Mix well.
To assemble, spread whipped brie onto the crostini slices, top with blueberry mixture. Drizzle with honey and sprinkle with coarse salt.
Blueberry Basil Mint Cocktail:
In a cocktail shaker add blueberries, basil, and mint. Muddle together. Add lemon juice, vodka, and honey (if using.) Add ice and shake vigorously. Pour into ice filled glasses, top with soda water and garnish.
