Caramelized Blue Cheese Ball And Port Cocktail With Fresh Oranges and Cracker Spread

Serves: Six | Prep: 10 min | Cook: 10 min

Ingredients:

Caramelized Blue Cheese Ball:
1/2 Tbsp butter
1/2 cup, 1 small onion, thinly sliced
1/4 tsp sugar
1/4 tsp pepper
8 oz cream cheese, room temperature
1/2 cup blue cheese, room temperature
1/2 tsp Worcestershire sauce
2/3 cup walnuts, finely chopped
1/2 tsp dried parsley

Port Cocktail:
2 oz port wine
1oz freshly squeezed orange juice
6oz tonic water


Garnish:
Fresh mint
Orange slices

Directions:

Caramelized Blue Cheese Ball:
In a skillet over medium heat, melt butter. Add onions and cook for
5 minutes, until soft and slightly brown, stirring occasionally. Lower heat, add sugar and pepper and cook for another 5 minutes, until caramelized.

In a bowl add cream cheese, blue cheese, caramelized onions and worcestershire sauce. Mix well. Shape the cheese mixture into a ball, wrap tightly in plastic wrap and chill in the refrigerator for at least 30 minutes.

On a flat dish combine the finely chopped walnuts and dried parsley.

When ready to eat, unwrap the cheese ball, roll into the walnuts, until fully coated.

Port Cocktail:
In a glass filled with ice add port wine and orange juice.
Top with tonic water, stir and garnish.

***Can be made 3 days in advance, don’t roll with nuts until ready to use.
