Mango Salsa & Mango Mojito

Ingredients:

Mango Salsa:
2 ripe mangoes, peeled, seeded and chopped small, mango tip
1/2 red bell pepper, finely chopped
1/4 cup red onion, finely chopped
1 jalapeno, minced
1 tsp fresh ginger, grated
1 lime, juiced
1 Tbsp fresh mint, chopped
1/3 cup fresh cilantro, chopped
1 Tbsp extra virgin olive oil
1 tsp salt

Mango Mojito:
2 oz white rum
1/2 lime, cut into wedges
5-8 mint leaves
1 tsp agave syrup
4 oz mango nectar
Sparkling water

Garnish:
Mint sprig
Lime wedges

Directions:

Mango Salsa:
In a bowl combine all ingredients, let rest, 5-10 minutes before serving.

Mango Mojito:
In a sturdy glass muddle rum, lime wedges, mint leaves and agave syrup together. Add ice and nectar. Stir. Top with sparkling water and garnish.
