Chili and Cheese Jalapeno Poppers with Chive Sour Cream & California Margarita

Ingredients:
Chili and Cheese Jalapeno Poppers:
10-12 jalapeno peppers
1/2 cup garlic and chive cream cheese, room temperature
1/2 cup cheddar cheese, shredded
1/4 cup chili heatwave tortilla chips
Spray oil
Chive Sour Cream:
1 cup sour cream
1/4 cup fresh chives, minced
1 lime, juiced
California Margarita:
2 oz tequila
1 1/2 oz orange liqueur
1 1/2 oz freshly squeezed lime juice
3 oz freshly squeezed orange juice
Coarse Salt
Garnish:
Lime Slices
Directions:
Chili and Cheese Jalapeno Poppers:
Preheat oven 400F/200C. Line a baking tray with baking paper.
Cut jalapenos in half lengthwise. Remove seeds and membrane. Transfer to the prepared tray cut side up.
Crush tortilla chips into fine crumbs.
In a bowl mix cream cheese and cheddar together.
Stuff the halved peppers with the cream cheese mixture. Top with the crushed tortilla chips and spray with oil. Bake, 5-8 minutes, until melted and browned. Remove from oven and top with more of the crushed tortilla chips.
Make the chive sour cream dip by adding sour cream, chives and lime juice in a bowl. Mix well and serve with the poppers.
California Margarita:
Spread salt onto a small plate. Run a lime wedge over the rim of the glass and dip rim into the salt.
In a cocktail shaker filled with ice add tequila, orange liqueur, orange juice, and lime juice. Vigorously shake and pour into the prepared glass and garnish.
