Prawn Cocktail & Pomegrante Spritzer

Ingredients:

Prawn Cocktail:
12 oz cooked prawns, thawed and drained
1/4 cup mayonnaise
2 Tbsp ketchup
1 tsp worcestershire sauce
1 tsp horseradish
1/2 lemon, juiced
few dashes hot sauce
3 scallions, thinly sliced
1 Tbsp fresh chives, chopped
1 Tbsp fresh parsley, chopped
Paprika
Lettuce leaves

Pomegrante Spitzer:
4 oz white wine
2 oz sparkling water
1 oz pomegranate juice
1/2 oz freshly squeezed lemon juice

Garnish:
Lemon slice
Pomegranate seeds

Directions:

Prawn Cocktail:
Add prawns, mayonnaise, ketchup, worcestershire sauce, horseradish, tabasco, parsley, chives and scallions to a bowl. Mix well.

Line the bottom of six martini glasses with lettuce leaves. Place prawn mixture on top of the lettuce. Garnish with fresh parsley, chives and scallions. Sprinkle with paprika and serve with a lemon wedge.

Pomegranate Spitzer:
To a glass filled with ice add wine, sparkling water, pomegranate juice, and lemon juice. Stir and garnish.
