Chorizo Cheddar Dip & Limona Corona

Ingredients:
Chorizo Cheddar Dip:
1/2 cup chorizo, chopped
1/2 cup red bell pepper, finely chopped
1 jalapeno, minced
2 Tbsp flour
1/2 cup whole milk
1/2 cup beer
2 cups mature cheddar cheese, shredded
1/2 cup gruyere cheese, shredded
2 scallions, thinly sliced
2 Tbsp fresh cilantro, chopped
Limona Corona:
1 bottle cold Corona
1 oz Bacardi Limon
1/2 lime, quartered
3-4 mint sprigs
Garnish:
Fresh Mint
Lime Wedges
Directions:
Chorizo Cheddar Dip:
In a skillet over medium high heat add chorizo. Cook, 5-7 minutes, until crisp. Set aside, leave oil in the pan. Add peppers, cook, 2-3 minutes, until soft. Whisk in flour, cook, 1-2 minutes. Slowly add milk and beer, stirring continuously, 5-6 minutes, until thickened. Add both cheeses, stir until smooth. Return chorizo leaving a little behind to garnish. Stir until combined. Top with scallions and cilantro, serve with tortilla chips.
Limona Corona:
In a glass muddle lime wedges and mint together. Add the cold corona and Bacardi limon. Gently stir and garnish.
