Cucumber Salsa & Spicy Cucumber Margarita

Ingredients:

Cucumber Salsa:
1 seedless cucumber, chopped small
2 tomatoes, chopped small
1/2 cup red onion, finely chopped
1 jalapeno, minced
2 garlic cloves, grated
2 tsp lime zest
2 limes, juiced
1/4 cup fresh cilantro, chopped
1 Tbsp extra virgin olive oil
1 tsp salt
1/2 tsp pepper
1/4 tsp cumin
Homemade Pita Chips

Spicy Cucumber Margarita:
1 lime, cut into wedges and slices
1 Tbsp coarse salt
1 seedless cucumber
1 jalapeno, sliced
2 oz tequila
1 oz Orange Liqueur
1 1/2 oz freshly squeezed lime juice
soda water

Garnish:
Lime slices
Jalapeno Slice

Directions:
Cucumber Salsa:

To a large bowl add cucumber, tomato, onion, jalapeno, garlic, lime zest, juice, cilantro, oil, salt, pepper, and cumin. Mix well and let sit 30 minutes before serving.

Spicy Cucumber Margarita:
With a vegetable peeler, peel long cucumber strips, this will be used to run along the inside of each glass. Remove all skin from the cucumber, roughly chop and place into a blender. Blend, until smooth. Strain juice into a fine mesh strainer. Set aside.

Line the inner part of the glass with the cucumber ribbons, about two ribbons per glass.

On a small plate add salt. Run a lime wedge over the rim of the glass and dip the rim into the salt. Add 1-2 jalapeno slices into the glass and muddle. Fill glass with ice. Add tequila, orange, liqueur, lime juice, and 3 oz of cucumber juice. Stir. Top with soda water and garnish.
