Limoncello

Serves: Twenty | Prep: 30 min, 1 week | Cook: 5 min

Ingredients:

Limoncello:
12 lemons
750 ml vodka
2 1/2 cups sugar
3 1/2 cups water

Directions:
Clean and dry lemons. Using a vegetable peeler, remove the rind from the lemons, careful not to get the white pith.

Place rinds in a large pitcher with a lid. Pour vodka over the rinds. Cover and let set at room temperature for one week.

After one week, make the simple syrup by adding sugar and water into a saucepan over medium heat. Stir and heat, until the sugar dissolves, 3-5 minutes. Take off the heat and let cool completely.

Pour the cooled simple syrup mixture over the lemon rind and vodka mixture, cover and let's sit at room temperature for 24 hours.

After 24 hours, strain through a fine mesh sieve, discarding the solids. Pour into bottles and refrigerate for at least four hours before serving.

Will last for one month in the refrigerator.
