Plum Crostata & Plum Mash Up
Serves: Six | Prep: 25 min +1 hour | Cook: 20 min
Ingredients:
Plum Crostata Dough:
1 ½ cups all-purpose flour
2 Tbsp sugar
1 tsp lemon zest
½ tsp salt
½ cup cold butter, cubed
¼ cup cold water
Filling:
6 ripe plums, halved and stoned
½ cup marzipan, diced small
¼ cup apricot jam
Plum Mash Up Cocktail:
Ingredients:
2 oz cognac
1 oz amaretto
½ oz lemon juice
1 plum, halved
Mint leaves
Garnish:
Plum halved
Mint sprig
Directions:
Plum Crostata:
In a food processor, add flour, sugar, zest and salt. Pulse to combine. Add the butter and pulse until the mixture resembles coarse crumbs.
With the motor running add the cold water through the feeding tube, process just until the dough starts to come together. Turn dough out
onto a well-floured surface and form into a disk, wrap in plastic wrap and refrigerate, until firm, at least 1 hour.
Preheat oven 400F/200C. Line a baking tray with baking paper.
On a floured surface roll out dough into a 12-inch circle. Transfer to the prepared baking tray. Spread out marzipan on top of the rolled-out dough and arrange plums, cut side up, leaving a 1 ½ inch border. Gently fold the edges of the dough towards the center, pleating the crust loosely and pinching to seal any cracks. Dollop on the apricot jam and spread out evenly.
Bake 20-30 minutes, until edges are browned, and plums are tender. Allow to rest 10 minutes before serving.
Plum Mash Up Cocktail:
In a shaker, muddle half the plum and mint leaves together. Add ice, cognac, amaretto and lemon juice. Shake vigorously and pour into a glass filled with ice. To garnish stick a mint sprig into the other half of the plum and add to the glass.
