Turkey Meatloaf & French Gimlet

Serves: Six | Prep: 10 min | Cook: 50 min

Ingredients:

Turkey Meatloaf:
1 ½ lbs ground turkey
1 onion, finely chopped
1 egg
1/2 cup tomato puree/passata
1 tsp salt
1/2 tsp pepper
1 cup fresh breadcrumbs

Glaze:
3 Tbsp light brown sugar
3 Tbsp white vinegar
2 Tbsp worcestershire sauce
2 Tbsp tomato paste
1 Tbsp dijon mustard

French Gimlet:
3 oz gin
1 oz freshly squeezed lime juice
1/2 oz St. Germain elderflower

Garnish:
Lime slice
Elderflower

Directions:

Turkey Meatloaf:
Preheat oven 350F/180C. Line a baking tray with baking paper.

In a bowl mix together turkey, onion, egg, tomato puree, salt and pepper. Once combined gently mix in the fresh breadcrumbs, transfer to the prepared tray and form mixture into a loaf.

In a small bowl combine all the glaze ingredients.  Spread half of the glaze on top of the meatloaf.

Cook, 20 minutes, remove from the oven and spread the remaining glaze on top of the meatloaf.  Cook for another 30-40 minutes, until the internal temperature is 165F/74C. Let rest for 5 minutes before slicing and serving.

French Gimlet:
In a shaker filled with ice add gin, lime juice and elderflower. Shake vigorously. Pour into a martini glass and garnish.
