Root Vegetables: Start in Cold Water

As the water heats up, the vegetables warm slowly, allowing the heat to penetrate evenly, preventing the exterior from becoming mushy while the inside remains firm.
Starting with cold water also helps with flavor retention, especially for starchy vegetables like potatoes, giving them a perfect texture when boiled. Be sure to salt to the water as it boils to season the vegetables as they cook.
Above-Ground Vegetables: Blanch in Boiling Water:
Above-ground vegetables like asparagus, broccoli, green beans, and spinach are more delicate and can lose their vibrant color and crisp texture if overcooked. To preserve their bright hues and crunchy texture, plunge them directly into already boiling water. This technique, called blanching, quickly cooks the vegetables, locking in their color and nutrients. You only need a couple of minutes in the boiling water to achieve that perfect tender-crisp result.
Once the vegetables are done, immediately transfer them to a bowl of ice water (a process called shocking) to stop the cooking process. This keeps them bright and fresh-looking, perfect for serving in salads or as a side dish.
