Mint Sauce

Ingredients:

Mint Sauce:
1 cup fresh mint leaves
1/4 tsp coarse salt
2 Tbsp white vinegar
3 Tbsp light brown sugar
1/2 cup boiling water

Directions:
Chop mint leaves with coarse salt. Transfer to a heat proof bowl. Add vinegar, sugar and boiling water. Stir, just until the sugar dissolves. Cover with cling film and let steep for at least 20 minutes.
