Baked Chocolate Glazed Doughnuts

Serves: Makes Twelve | Prep: 15 min | Cook: 7 min

Ingredients:

Doughnuts:
2 cups all-purpose flour
1/2 cup cocoa powder
1/2 cup sugar
2 tsp baking powder
1 tsp salt
2 eggs
1 cup milk
2 Tbsp butter,melted
1 tsp vanilla extract

Chocolate Glaze:
1 1/4 cup powdered/icing sugar
1/4 cup cocoa powder
3 Tbsp milk
2 tsp maple syrup
1 tsp vanilla extract

Directions:
Preheat oven 425F/220C. Spray a doughnut pan with cooking spray. 

In a large bowl sift flour and cocoa powder together. Add sugar, baking powder, and salt, stir to combine.

In a jug whisk milk, eggs, butter, and vanilla extract together. Add the wet mixture into the dry ingredients. Stir, just until combined. Fill each doughnut hole about 2/3 full. Bake, 7-9 minutes, until golden and the top of the doughnuts spring back when touched. Remove to a wire rack and let cool slightly.

While cooling, make the glaze. In a bowl whisk together powdered sugar, cocoa powder, milk, maple syrup, and vanilla together. If glaze needs to be thinned out, add a small amount of milk.  Glaze the bottom of the slightly warm doughnut and let set until hard.

** A muffin tin can be used. Just decrease oven temp to 350F/180C and bake 15-18 minutes, until a toothpick in the center of the muffin comes out clean.
