Cheddar Roasted Garlic Broccoli Stuffed Chicken

Ingredients:
Cheddar Roasted Garlic Broccoli Stuffed Chicken:
4 chicken breasts, boneless and skinless
2 cups broccoli florets
1 head garlic, top removed
2 Tbsp olive oil
1 tsp salt, divided
1/2 tsp pepper, divided
1 1/2 tsp onion powder
1 tsp paprika
1 cup cheddar cheese, shredded
1/4 cup mayonnaise
Directions:
Preheat oven 425F/220C. Line a baking tray with baking paper.
Place broccoli and head of garlic onto the prepared tray. Drizzle with I Tbsp olive oil, 1/2 tsp salt and 1/4 tsp pepper. Roast, 15-20 minutes. Let cool slightly before removing garlic cloves, and chopping the broccoli and garlic slightly.
In a small bowl mix remaining 1/2 tsp salt, 1/4 tsp pepper, onion powder, and paprika together.
Prepare the chicken breast by patting dry with a paper towel, cut a slit into the thicker side of the breast, leaving the chicken breast bottom intact. Season inside and outside with spice mixture.
In a bowl mix cheese, mayonnaise, chopped broccoli and garlic together. Transfer cut chicken breast onto the prepared tray. Stuff each half cut side of the chicken breasts with equal amounts of the broccoli cheese mixture. Cover the top with the other half of the chicken breast. Drizzle the top of each chicken with the remaining 1 Tbsp olive oil. Bake, 18-22 minutes, internal temperature 165F/74C.
