Balsamic Caramelized Shallots

Ingredients:
Balsamic Caramelized Shallots:
1 1/2 lbs whole shallots, peeled
3 Tbsp butter
2 Tbsp olive oil
2 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1 Tbsp balsamic vinegar
1 Tbsp fresh parsley, chopped
Directions:
Preheat oven 375F/190C.
Heat butter and oil in a cast iron skillet over medium heat. Add shallots, sugar, salt, and pepper. Cook, 10 minutes, stirring occasionally, until shallots start to brown. Add vinegar, stir, place in the oven and roast, until tender 20-30 minutes. Sprinkle with parsley before serving.
