Balsamic Chicken and Baguette Bake

Serves: Four | Prep: 45 min | Cook: 50 min

Ingredients:

Balsamic Chicken and Baguette Bake:
1 1/2 lbs chicken thighs or breasts, bone in, skin on
1 lb green beans, trimmed
1 pint cherry tomatoes
3 carrots, julienne
3/4 cup olive oil
1/4 cup balsamic vinegar
1 Tbsp honey
6 garlic cloves, minced
1 shallot, finely chopped
1 tsp dried basil
1 tsp dried parsley
1 tsp salt
1/2 tsp red pepper flake
1/2 tsp pepper
1 baguette, torn into pieces
6 cup arugula/rocket
2 Tbsp fresh basil, chopped

Directions:
In a bowl add olive oil, balsamic vinegar, honey, garlic, shallots, dried basil, parsley, red pepper flake, salt and pepper, whisk to combine.

Place chicken into a bowl and pour half the dressing onto the chicken, making sure it is completely coated with the marinade. In another bowl add green beans, carrots and tomatoes, pour over the remaining marinade and toss to coat. Let the chicken and vegetables, marinate for at least 30 minutes.

Preheat oven 425F/220C. Line a baking tray with baking paper.

Using tongs, arrange chicken, skin side up on the prepared tray. Using a slotted spoon, transfer the vegetables to the tray, discard all marinades. Bake, 25 minutes.

In a bowl add the torn baguette pieces, drizzle with olive oil, salt and pepper. Add the torn baguette with the chicken and vegetables and bake for another 10 minutes.

Serve on top of the arugula and garnish with fresh basil.
