Black Bean Corn Salad

Serves: Six | Prep: 25 min | Cook: 5 min

Ingredients:

Black Bean Corn Salad:
4 fresh ears of corn
1 can black beans, drained and rinsed
1/2 red bell pepper, finely chopped
1/2 red onion, finely chopped|
1 jalapeno pepper, minced
1/4 cup fresh cilantro, chopped
1 lime, juiced
1 Tbsp extra virgin olive oil
1 tsp red wine vinegar
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cumin
1/4 tsp paprika
1/2 cup feta, crumbled

Directions:
Start by cooking the corn. Place into a pot, cover with cold water, add one Tablespoon salt, and bring to the boil. Boil for 5 minutes, turn off the heat, cover and let sit for 20 minutes before straining. Let corn cool before cutting the kernels from the cob. In a large bowl add all ingredients and mix well.
