Cauliflower General Tso’s

Ingredients:
Cauliflower General Tso’s:
1 large head cauliflower, cut into florets
3 eggs
1 1/4 cup panko breadcrumbs
2 tsp cornstrach/corn flour
1 Tbsp sesame oil
1 tsp fresh ginger, grated
3 garlic cloves, minced
1/2 tsp garlic powder
1/4 tsp red pepper flake
1/2 cup vegetable stock
1/4 cup soy sauce
2 Tbsp hoisin sauce
1 Tbsp honey
3 tsp rice vinegar
1 red chili, thinly sliced
3 scallions, thinly sliced, lengthwise
2 tsp toasted sesame seeds
Directions:
Preheat oven 425F/220C. Line a baking tray with baking paper.
Beat eggs in a large bowl. In another bowl add breadcrumbs. Toss cauliflower into the beaten eggs, coat well. Next dredge the cauliflower through the crumbs, covering fully. Place onto the prepared tray, repeat until all cauliflower is coated. Bake, 15 minutes, then switch the oven to broil/grill. Broil/grill until crispy, 2-3 minutes.
Meanwhile, in a bowl whisk together cornstarch with 2 Tbsp of water, set aside.
Heat a large skillet over medium heat. Add sesame oil, ginger, fresh garlic, garlic powder and red chili flake, cook, 1-2 minutes. Add stock, soy sauce, hoisin, honey and rice vinegar, whisk to combine and bring to the boil. Whisk in cornstarch mixture and cook until slightly thickened. Toss the cauliflower with the sauce.
Serve over steamed rice and garnish with the sliced chilies, scallions and sesame seeds.
