Honey Roasted Carrots and Parsnips
Serves: Four | Prep: 20 min | Cook: 20 min
Ingredients:
Honey Roasted Carrots and Parsnips:
1 lb carrots
1 lb parsnips
2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper
2-3 tsp honey
Directions:
Preheat oven 450F/230C. Line a baking tray with baking paper.
Peel, remove tops and cut carrots and parsnips into long slices. Place on prepared tray. Drizzle with olive oil, salt and pepper. Roast, 15-20 minutes, until soft, easily pierced with a knife. Drizzle with honey and roast for another 5 minutes.
