Cheddar Chive Scones

Serves: Eight | Prep: 15 min | Cook: 20 min

Ingredients:

Cheddar Chive Scones:
3 cups plus 1 Tbsp all-purpose flour
2 tsp baking powder
1 tsp salt
1/2 cup cold butter, cubed
2 eggs
1 cup buttermilk, plus extra
1/2 lb cheddar cheese, smal diced
1/2 cup fresh chives, minced


Directions:
Preheat oven 400F/200C. Line two baking trays with baking paper.

In a small bowl mix together 1 Tbsp flour with the cheese and chives.

In a jug whisk eggs and buttermilk together.

In a large mixing bowl combine flour, baking powder and salt.  Add the butter and rub with your fingertips, until the mixture comes together into crumbs. Add the wet ingredients along with the cheddar and chives to the butter mixture and mix until everything is moist.

Pour onto a well-floured surface and with floured hands work dough into a ball. Roll out, about 1 inch thick. Flour your cookie cutter and cut dough.

Transfer scones onto the prepared baking trays, brush the tops with buttermilk. Bake, 20 to 25 minutes, until tops are golden.
