Cheesy Ham and Potato Casserole

Ingredients:
Casserole:
1 Tbsp butter, room temperature
1 1/2 cups cooked ham, chopped
2 lbs potatoes, peeled and thinly sliced
1 cup cheddar cheese, shredded
Caramelized Onions:
2 Tbsp butter
2 onions, thinly sliced
2 garlic cloves, minced
1/2 tsp salt
1/2 tsp pepper
Cheesy Sauce:
3 Tbsp butter
3 Tbsp flour
2 1/4 cups whole milk
1/2 cup cheddar cheese, shredded
1/4 tsp pepper
Directions:
Preheat oven 350F/180C. Grease an 11X8 inch ovenproof dish with one Tablespoon butter.
Make the caramelized onions by melting two Tablespoons of butter in a skillet over medium heat. Add onions, salt and pepper, cook 10-12 minutes, stirring occasionally, until caramelized.
To make the cheesy sauce melt three Tablespoons butter over medium heat, whisk in flour and cook, 1-2 minutes. Slowly add milk, while whisking. Whisk and cook, 4 minutes. Stir in cheese and pepper, cook 1-2 minutes, until the cheese melts.
To assemble add half of the potatoes to the bottom of the prepared dish, top with ham, caramelized onions and half the sauce. Layer with the remaining potatoes and the remaining sauce. Top with 1 cup shredded cheddar cheese, cover with aluminum foil, bake 40-45 minutes. Uncover and cook 10 minutes more, until bubbly and golden.
