Chopped Chicken Livers

Serves: Six| Prep: 5 min | Cook: 10 min

Ingredients:

Chopped Chicken Livers:
3 Hard Boiled Eggs, chopped
2 Tbsp butter
1/2 onion, finely chopped
2 garlic cloves, minced
1 lb chicken livers
1 Tbsp white wine
1/4 tsp pepper
1/2 cup mayonnasie
1 Tbsp fresh parsley, chopped
salt to taste

Directions:
Melt butter in a stainless steel skillet over medium high heat. Add onion, cook 3-5 minutes, until soft. Add garlic, cook 1 minute more. Add livers, pepper and white wine. Cook, 7-10 minutes. While livers are cooking take a fork and start to smash the livers. Once the liquid has evaporated and the livers are cooked and crumbled, mash in chopped eggs. Stir in mayonnaise, parsley and season with salt.

Serve with Bruschetta
