Grilled Mahi Mahi Sandwich with Spicy Sriracha Mayonnaise

Serves: Four | Prep: 10 min | Cook: 10 min

Ingredients:

Grilled Mahi Mahi Sandwich:
4 Mahi mahi fillets
1-2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper
4 ciabatta rolls
4 slices manchengo cheese
fresh argula

Spicy Sriracha mayonnaise:
1 cup mayonnaise
3 Tbsp sriracha
1 Tbsp agave syrup
1 lime, juiced
1/4 tsp chili powder

Directions:
Preheat barbecue, high heat.

Make the spicy sriracha mayonnaise by mixing mayonnasie, sriracha, agave, lime juice and chili powder together.

Pat fillets dry with a paper towel. Season both side with olive oil, salt and pepper. Place onto the preheated grill. Cook, 5 minutes per side. Slice ciabatta rolls in half, place on the grill. Cook 2-3 minutes, until golden and crisp.

Build the sandwich by placing fish, cheese, spicy sriracha mayonnaise and fresh argula between the toasted ciabatta rolls.
