Christmas Sugar Cookies with White Chocolate Topping

Serves: Makes 2-3 dozen | Prep: 1 hr ,10 min | Cook: 5 min

Ingredients:

Cookies:
1/2 lb butter, room temperature
1 cup sugar
3 Tbsp milk
1 tsp vanilla extract
1 egg
3 cups all-purpose flour
1 1/2 tsp baking powder
1 tsp salt

White Chocolate Topping:
8 oz white chocolate
Assorted sprinkles

Directions:
In a mixer with a paddle attachment add sugar, butter, milk, vanilla and egg, mix well.  With the mixer on low add flour, baking powder and salt, mix until well combined.  Cover bowl with plastic wrap and refrigerate for at least one hour.

Preheat oven 400F/200C.  Line three baking trays with baking paper.

Pour dough out onto a well-floured surface, with floured hands, work dough into a ball. Using a floured rolling pin, roll dough out 1/8 inch thick and cut with a floured cookie cutter. Place each cookie onto the prepared baking tray about 1 inch apart. Bake 5-8 minutes, until edges are lightly browned, let rest on tray for 2 minutes before transferring to a wire rack.

White chocolate topping is made by melting the white chocolate over a double boiler, until smooth. Dip each cookie, face down into the white chocolate. Using a mini spatula or spoon, create a random swirly pattern, then decorate cookies with sprinkles.
