Cod Baguette Tray Bake with Garlic Mayonnaise

Ingredients:

Cod and Baguette Tray Bake:
3 garlic cloves, minced
1/2 cup olive oil
1/4 cup balsamic vinegar
1 Tbsp freshly squeezed lemon juice
1 tsp paprika
1 tsp salt
1/2 tsp dried oregano
1/2 tsp pepper
4 cod fillets
1/2 lb broccoli stems
1 zucchini, chopped
2 red onions, quartered
2 cups cherry tomatoes
1/2 baguette, cubed
1/4 cup fresh basil, chopped
1/4 cup parmesan cheese, grated

Garlic Mayonnaise:
1/2 cup mayonnaise
1 garlic clove, grated
2 Tbsp parmesan cheese, grated
1 Tbsp fresh basil, chopped

Directions:
Preheat oven 425F/220C.

In a bowl whisk minced garlic, oil, balsamic vinegar, lemon juice, paprika, salt, dried oregano, and pepper together.

In a roasting pan add zucchini, broccoli, bell pepper, onion, and tomatoes. Place cod fillets among the vegetables. Drizzle with half the dressing. Cook, 15 minutes.

Add bread cubes to a bowl. Drizzle with the remaining dressing, add to the roasting pan, cook for another 10-12 minutes, until fish is cooked, vegetables are tender, and bread is golden. Garnish with fresh basil and parmesan cheese.

Make the garlic mayonnasie by mixing mayonnasie, grated garlic, parmesan cheese, and basil together.
