Creamy Cheesy Beef Pasta

Ingredients:
Creamy Cheesy Beef Pasta:
8oz rigatoni pasta
1 Tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
1 lb ground beef
1 tsp paprika
1 tsp salt
1/2 tsp pepper
1 cup heavy/double cream
1 cup beef stock
1 cup cheddar cheese, shredded
2-4 Tbsp fresh parsley, chopped
Directions:
Heat oil in a large skillet over medium high heat. Add onion and cook for 3-5 minutes, until soft. Add garlic and cook 30-60 seconds more. Add beef, stir and cook 5-8 minutes, until browned and no longer pink. Stir in paprika, salt, and pepper. Add beef stock and bring to the boil. Stir in cream, decrease heat to a low simmer and cook 10-12 minutes, until sauce thickens.
Meanwhile, cook pasta as per intructions on the book in salted boiling water. Drain. Saving some pasta water if needed.
Add drained pasta to the skillet, remove from the heat and stir in cheese, until melted. Add the reserved pasta water if needed. Lastly, top with fresh parsley to serve.
