Creamy Chicken Gnocchi Soup

Serves: Four | Prep: 20 min | Cook: 30 min

Ingredients:

Creamy Chicken Gnocchi Soup:
2 Tbsp olive oil
2 carrots, chopped
2 celery stalks, chopped
1 onion, chopped
3 garlic cloves, minced
2 Tbsp butter
2 Tbsp flour
2 tsp fresh thyme, minced
1 tsp dried oregano
1/2 tsp salt
1/4 tsp pepper
1 1/2 lbs chicken breasts, skinless and boneless
4 cups chicken stock
2 cups fresh spinach
16 oz package gnocchi
1 cup milk
1 cup heavy/double cream
1/2 cup parmesan cheese, grated

Directions:
Heat oil in a pot over medium heat. Add carrots, celery, and onion. Cook, 3-4 minutes, until soft. Add garlic and cook for 1 minute more. Melt butter. Stir in flour and cook for 1 minute. Add thyme, oregano, salt, and pepper. Stir to coat. Add chicken and stock. Stir and simmer for 20 minutes, until chicken is cooked through and easily shreds. Remove chicken from pot and shred with two forks. Place the shredded chicken back into the pot and stir in spinach, gnocchi, milk, cream, and parmesan cheese. Cook and stir for 5 more minutes, until all is cooked through and warm.
