Creamy Chive Potato Salad
Serves: Six | Prep: 15 min | Cook: 15 min
Ingredients:
Chive Potato Salad:
2 lbs baby potatoes, halved
1 tsp salt
2 stalks celery, chopped
1/4 cup fresh chives, chopped
Creamy Dressing:
1/4 cup mayonnaise
1/4 cup sour cream
2 Tbsp buttermilk
1 garlic clove, pressed
1 Tbsp freshly squeezed lemon juice
1 Tbsp fresh dill, minced
1/2 tsp salt
1/4 tsp pepper
Directions:
Place potatoes in a saucepan cover with cold water, add 1 tsp salt. Bring to the boil. Cook, 15-18 minutes, until just tender. Drain and let cool.
In a large bowl whisk mayonnaise, sour cream, buttermilk, garlic, lemon juice, fresh dill, salt, and pepper together. To the bowl add cooked potatoes, celery, and fresh chives. Gently mix, until combined.
