Dark Chocolate Candied Orange Slices
Serves: 12 | Prep: 15 min, plus cooling | Cook: 1 hr, 5 min
Ingredients:
Dark Chocolate Candied Oranges:
3 large naval oranges
4 cups water
2 cups sugar
1/2 cup orange liqueur
1 cinnamon stick
8 oz dark chocolate, roughly chopped
Directions:
Line a baking tray with baking paper.
Prepare the oranges, by washing and slicing into 1/4-inch thick slices, discarding the ends.
In a large saucepan over medium heat add water, sugar, liqueur, and a cinnamon stick. Cook, until the sugar dissolves, 5-7 minutes. Bring to a simmer. Add orange slices. Cook, 60-70 minutes, stirring occasionally, until the peal becomes translucent. Transfer oranges to a wire rack that sits on top of the lined baking tray. Let the orange slices cool completely, they can be place in the refrigerator to speed up the cooling process.
In a double boiler (a bowl that sits sturdy on a saucepan with water inside, however, make sure the bottom of the bowl does not touch the water underneath) over low heat add the chocolate, stir often until melted and smooth. Remove from heat, dip the bottom of the orange slices into the chocolate and place the slices back on the rack to harden.
Once hard, store in an airtight container in the refrigerator with baking paper between the slices.
