Guinness Beef Chilli

Serves: Four | Prep: 20 min | Cook: 45 min

Ingredients:

Guinness Beef Chili:
1 Tbsp olive oil
8 oz brown mushrooms, sliced
3 celery stalks, chopped
2 carrots, finely chopped
1 onion, chopped
1/2 red bell pepper, chopped
4 garlic cloves, minced
1 jalapeno pepper, minced
1 1/2 lbs ground beef
1 Tbsp chili powder
1 Tbsp paprika
2 tsp cumin
2 tsp dried coriander
1 tsp dried oregano
1 tsp salt
1 tsp pepper
2 Tbsp tomato paste
14 oz Guinness
1 14 oz can chopped tomatoes
1 14 oz can red kidney beans, drained and rinsed
3/4 cup frozen corn

Garnish:
Sour Cream
Shredded Cheddar Cheese
Thinly Sliced Scallions
Chopped Fresh Parsley

Directions:
Heat oil in a large pot over medium high heat. Add mushrooms, celery, carrots, onion, red bell pepper, garlic, and jalapeno pepper. Cook, 6-8 minutes, until soft. Stirring occasionally. Add beef. Cook, stirring frequently, 5 minutes, until browned. Stir in chili powder, paprika, cumin, dried coriander, oregano, salt, and pepper. Cook, 1 minute. Stir in tomato paste. Cook and stir, 1-2 minutes. Add Guinness, chopped tomatoes, kidney beans, and corn. Bring to the boil, reduce heat, simmer, 30 minutes. Stirring occasionally.  

Garnish and serve with Rice
