Lamb and Feta Tortilla
Serves: Four | Prep: 15 min | Cook: 12 min
Ingredients:
Lamb and Feta Tortilla:
4 soft flour tortillas
1 lb ground lamb
1/2 cup feta cheese, crumbled
3 Tbsp fresh mint, finely chopped
3 garlic cloves, minced
1 Tbsp olive oil
1 tsp cumin
1 tsp dried coriander
1/2 tsp red pepper flake
1/2 tsp salt
1/4 tsp pepper
Toppings:
Lettuce
Red onion, thinly sliced
Tomato
Tzatziki
Directions:
In a bowl mix lamb, feta, mint, garlic, oil, cumin, coriander, red pepper flake, salt, and pepper together. Roll into four balls. Squish each ball flatly onto a tortilla.
Heat a skillet over medium high heat. Add meat side down and cook 3-4 minutes, flip and cook, 1-2 minutes more.
Remove from skillet and top with lettuce, onion, tomato, and tzatziki.
