Caprese Sandwich with Pesto and Crispy Prosciutto
Ingredients:
Caprese Sandwich with Pesto and Crispy Proscuitto:
1 baguette
8 slices proscuitto
4 Tbsp Balsamic Glaze
1 cup fresh basil
2 cups arugula
16oz fresh mozzarella, sliced
3 ripe tomatoes, sliced
2 tsp sea salt
1/2 cup Pesto
1/2 cup mayonnaise
Directions:
Preheat oven 400F/200C. Line a baking tray with baking paper. Place prosciutto on prepared tray. Cook, 9-10 minutes, until crisp. Slice baguette lengthwise, cut into four equal size sandwiches. Place sliced bread, face side up on a baking tray. Bake, 5 minutes.
In a bowl mix pesto and mayonnaise together.
To assemble spread each sandwich with 1 Tbsp balsamic glaze, top with basil, arugula, fresh mozzarella, and tomato. Sprinkle tomatoes with sea salt. Top with the crispy prosciutto.
Spread the pesto mayonnaise mixture on to the other slice of bread and place on top.
