Leftover Potato Pancakes

Serves: Six | Prep: 5 min | Cook: 5 min

Ingredients:

Leftover Potato Pancakes:
3 cups chilled leftover mashed potatoes
1 egg
3 Tbsp flour
3 scallions, thinly sliced
1 Tbsp fresh parsley, chopped
1/3 cup panko breadcrumbs
vegetable oil

Directions:
In a bowl mix chilled mashed potatoes, egg, flour, scallions, and parsley together. Place panko breadcrumbs onto a flat dish. Using 1/3 cup measuring cup to help measure the potato mixture. Shape into six discs. Lightly coat each disc with the panko breadcrumbs.

In a large skillet over medium high heat, add oil about ¼ inch depth. Once oil is hot and shimmering add the potato pancakes. Cook, 3-4 minutes, each side, until crisp and golden brown.
