Lime Pie with Meringue Topping

Ingredients:
Crust:
1 1/2 cups graham crackers/digestive biscuits
2 Tbsp sugar
1 Tbsp light brown sugar
5 Tbsp butter, melted
Lime Filling:
1 can sweetened condensed milk
3 egg yolks
1 tsp lime zest
1 Tbsp freshly squeezed lime juice
Meringue Topping:
3 egg whites
1/4 cup sugar
1/4 tsp cream of tartar
Directions:
Preheat oven 350F/180C. Grease the bottom and sides of a pie plate.
In a food processor, process the crackers/biscuits until fine crumbs. Place crumbs into a bowl. Add sugars and melted butter, mix,. Press mixture into the prepared pie plate. Bake, 7 minutes, let cool for at least 30 minutes.
Make the filling by adding condensed milk, egg yolks, lime juice, and zest into a large bowl. Mix until combined, pour over the cooled pie crust. Next, make the meringue. In a bowl add egg whites, sugar, and cream of tartar. Using an electric mixer, mix, until stiff peaks form, about 8-10 minutes. Spread the meringue on top of the filling, making sure to spread it out so it touches the edges. Bake, 12-15 minutes, until lightly brown on top. Let meringue cool slightly before serving.
