Marinara Sauce

Ingredients:

Marinara Sauce:
2 Tbsp olive oil
1 onion, finely chopped
1 carrot, finely chopped
4 garlic cloves, minced
½ cup white wine
1 tsp sugar
2 tsp dried oregano
1 tsp dried basil
1 tsp dried parsley
½ tsp red pepper flake
1 tsp salt
½ tsp pepper
2 Tbsp tomato paste
1 can chopped tomatoes
3 cups tomato sauce/passata
½ cup water

Directions:
Heat oil in a large pot over medium heat. Add onions and carrots, cook until onions are soft and carrots are tender, 3-5 minutes. Add garlic, sugar, oregano, basil, parsley, red pepper flakes, salt and pepper stir and cook, 1 minute more. Add white wine, cook, 1-2 minutes. Add tomato paste, canned tomatoes, tomato puree/passata. Use the water to clean all cans and jars, then add to the sauce. Bring to the boil then simmer, 20-30 minutes with lid partially on, stirring occasionally.
