Mascarpone Lemon Cookies

Serves: Makes | Prep: 15 min | Cook: 10 min

Ingredients:

Mascarpone Lemon Cookies:
1 cup mascarpone cheese, room temperature
1/2 cup butter, room temperature
1 cup sugar
2 tsp lemon zest
1/4 cup lemon juice
1 tsp vanilla extract
2 eggs
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt

Directions:
Preheat oven 350F/180C. Line two baking trays with baking paper.

In a bowl add mascarpone cheese, butter, sugar and lemon zest. Mix with a wooden spoon until combined. Add lemon juice, vanilla extract and eggs. Mix well.

Sift together the flour, baking powder and salt. Gradually stir into the wet batter, just until combined.

With a small ice cream scoop, scoop batter onto the prepared trays. Bake, 10-12 minutes, until lightly golden. Let cool and dust with powdered sugar before serving.
