Mascarpone Creamed Corn
Serves: Six | Prep: 5 min | Cook: 10 min
Ingredients:
Mascarpone Creamed Corn:
1 Tbsp butter
1 onion, finely chopped
1 garlic clove, minced
4 cups frozen corn, thawed and drained
1/2 tsp salt
1/2 lemon, juiced
1 cup mascarpone cheese, room temperature
1/2 cup parmesan cheese, grated
1 1/2 tsp fresh thyme, minced
1/4 tsp pepper
Directions:
In a saucepan over medium heat, melt butter. Add onion and cook, until soft, 3-5 minutes. Add garlic, cook, 30 seconds more. Add corn and salt, stir and cook 2-3 minutes, until heated through.
Turn off heat. Stir in lemon juice, mascarpone, parmesan, fresh thyme and pepper, until smooth.
