Mussels in Cream Sauce

Serves: Four | Prep: 10 min | Cook: 8 min

Ingredients:

Mussels in Cream Sauce:
1.5 lbs fresh mussels, cleaned and debearded
1 Tbsp olive oil
1 Tbsp butter
1 small onion, thinly sliced
4 garlic cloves, thinly sliced
6-7 fresh thyme sprigs
1/2 tsp salt
1/4 tsp pepper
1/2 cup white wine
1 cup fresh cream
3-4 Tbsp fresh parsley, chopped

Directions:
In a saucepan with a lid heat butter and oil over medium high heat. Add onions, garlic, thyme sprigs, salt, and pepper. Cook, 3-5 minutes, until the onions are soft. Add wine, cook, 2 minutes. Add mussels, cover, cook, 3-5 minutes, shaking the pot occasionally, until the mussels open. Lower heat, add cream, stir and heat through. Garnish with fresh parsley.
