Oven Roasted Brown Sugar Carrots

Ingredients:
Oven Roasted Brown Sugar Carrots:
1 1/2lbs carrots, peeled
3 garlic cloves, minced
1/4 cup light brown sugar
2 Tbsp butter, melted
1 Tsp olive oil
1 tsp onion powder
1/2 tsp salt
1/4 tsp pepper
2 tsp fresh thyme, minced
Directions:
Preheat oven 425F/ 218C. Line a baking tray with baking paper.
Peel Carrots, and if large, cut into 2-inch rounds. Place carrots on to the prepared tray.
In a bowl whisk garlic, sugar, butter, oil, onion powder, salt, and pepper together. Pour over the carrots and coat well. Roast, 25 minutes, stirring after 15 minutes of cooking. Once soft, toss carrots in the glaze and sprinkle with fresh thyme.
