Cranberry Bread
Serves: 1 loaf | Prep: 15 min | Cook: 45 min
Ingredients:
Cranberry Bread:
1 cup cranberry sauce
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup butter, room temperature
1/2 cup sugar
2 eggs
1 Tbsp orange zest
1 tsp vanilla extract
1/2 cup milk
1/2 cup sliced almonds
Directions:
*If cranberry sauce is chunky, pulse into a food processor, until finely chopped.
Preheat oven 350F/180C. Line a loaf tin with baking paper.
In a bowl mix flour, powder, and salt together.
In a mixer with a paddle attachment cream butter and sugar together. Add eggs and mix, scraping down the bowl as needed. Mix in zest and vanilla. Reduce speed. Alternating add flour mixture and milk, starting and ending with the flour mixture. Mix until combined. Spread 1/2 of the batter evenly into the prepared loaf tin. Spoon 3/4 cup of the cranberry sauce over the batter, leaving a 1/2-inch boarder along the edges. Cover with the remaining batter. Add the remaining 1/4 cup cranberry sauce on top of the batter and gently press into the batter. Sprinkle with almond slices. Bake, 45-50 minutes, until a toothpick inserted into the center comes out clean. Let cool before slicing.
