Rhubarb Strawberry Crumble

Serves: Eight | Prep: 20 min | Cook: 60 min

Ingredients:

Rhubarb Strawberry Crumble:
1 lb fresh rhubarb, cut 1/2 inch thick
1/2 lb fresh strawberries, hulled and quartered
1 tsp orang zest
1 Tbsp freshly squeezed orange juice
1/4 cup sugar
1 Tbsp cornstarch/cornflour
1 cup oats
1 cup flour
1/2 cup light brown sugar
4 Tbsp butter, melted

Directions:
Preheat oven 350F/180C.

In a bowl mix together rhubarb, strawberries, orange zest, juice, sugar, and cornstarch.

In another bowl mix oats, flour, brown sugar, and melted butter together.

Transfer the rhubarb mixture to a pie plate and cover evenly with the oats mixture. Bake, 60 minutes.
