Roasted Garlic Parsnips

Serves: Four | Prep: 10 min | Cook: 20 min

Ingredients:

Roasted Garlic Parsnips:
2 lbs parsnips, peeled, trimmed, and cut into 1/2-ich pieces
10 garlic cloves, sliced
2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
2 tsp fresh thyme, minced
coarse salt

Directions:
Preheat oven 450F/230C. Line a baking tray with baking paper.

Coat parsnips and garlic with oil, salt, pepper, and garlic powder. Transfer to the prepared tray. Bake, 15-20 minutes, stirring once halfway through. Garnish with fresh thyme and coarse salt before serving.
