Sage Roasted Pork Tenderloin

Sage Roasted Pork Tenderloin:
Ingredients:
1.5 lbs pork tenderloin
2 tsp coarse salt
10-12 leaves fresh sage
4 garlic cloves
1 Tbsp whole grain mustard
1/4 tsp pepper
2 Tbsp olive oil, divided
Directions:
Preheat oven 400F/200C. Line a baking tray with baking paper.
Chop garlic and sage with the salt. Add to a bowl along with mustard and 1 Tbsp olive oil. Mix. Rub mixture all over pork.
Heat the remaining 1 Tbsp olive oil in a skillet over medium high heat. Add pork and sear all sides, about 2 minutes per side. Transfer to the oven and cook, 20-25 minutes, until the pork is cooked through, an internal temperature 145F/63C. Let rest, 10 minutes before serving.
