Minted Buttered Potatoes

Serves: Four | Prep: 10 min | Cook: 25 min

Ingredients:

Minted Buttered Potatoes:
2 lb baby potatoes
4 tsp salt, divided
1/4 cup butter
4 garlic cloves, minced
1/4 cup fresh mint, chopped
1/4 tsp pepper

Directions:
Place potatoes in a pot, cover with cold water, add 2 tsp salt. Turn on high heat, bring to the boil, reduce heat slightly to keep from boiling over. Cook, 10-12minutes, until potatoes can be easily pierced with a knife, but slightly firm. Drain. Cut potatoes in half.

Melt butter in a skillet over medium heat. Add garlic and cook, 1 minute. Add halved potatoes, remaining 2 tsp salt, and pepper. Stir and cook, 2-3 minutes, until coated and cooked through. Take off the heat and add fresh mint.
