Sesame Cucumber Salad

Ingredients:
Cucumber Salad:
1 large seedless cucumber, thinly sliced
1/2 red onion, thinly sliced
1 red chili, thinly sliced
1/4 cup fresh cilantro, chopped
2 tsp toasted seasme seeds
Sesame Dressing:
1/4 cup rice vinegar
2 Tbsp sugar
1 Tbsp freshly squeezed lime juice
2 tsp sesame oil
2 tsp fish sauce
1/2 tsp salt
Directions:
To a large bowl whisk vinegar, sugar, lime juice, sesame oil, fish sauce, and salt together. Stir in cucumber, onion, chili, and cilantro. Let sit for 20 minutes before serving.
