Sheet Pan Roasted Brussels Sprouts with Prosciutto

Serves: Six | Prep: 20 min | Cook: 20 min

Ingredients:

Sheet Pan Roasted Brussels Sprouts with Prosciutto:
1 1/2lbs brussels sprouts, trimmed and halved
2 shallots, sliced
2 1/2oz prosciutto, roughly chopped
2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper
1 Tbsp balsamic vinegar
2 tsp honey


Directions:
Preheat oven 450F/230C. Line a baking tray with baking paper.

Place sprouts, shallots and prosciutto on to the prepared tray. Drizzle with olive oil, ¾ tsp salt and pepper, toss to coat. Roast, 15 minutes. Remove from the oven, drizzle balsamic vinegar and honey over the sprouts, toss to coat and return to the oven. Bake for another 5 minutes, until crisp and browned. Sprinkle with the remaining ¼ tsp of salt and serve warm.
