Smoked Salmon Lemon Tagliatelle

Ingredients:

Smoked Salmon Lemon Tagliatelle:
12 oz tagliatelle
1 Tbsp olive oil
3 garlic cloves, minced
3/4 cup creme fraiche
1/2 cup frozen peas
2 Tbsp parmesan cheese, grated
1 tsp lemon zest
1 Tbsp freshly squeezed lemon juice
12 oz smoked salmon, thinly sliced
2 cups arugula/rocket
1 Tbsp fresh chives, minced
fresh dill leaves
freshly ground black pepper

Directions:
In a pot of boiling salted water add tagliatelle. Cook according to package directions. Reserve pasta water, at least ½ cup.

Meanwhile, heat oil over medium low heat. Add garlic, cook, 1-2 minutes, until fragrant, not brown. Stir in crème fraiche, peas, parmesan cheese, zest, juice and 1/3 cup pasta water. Cook, stirring continuously, 3-4 minutes. Add cooked pasta, salmon, rocket, and fresh chives. Adding more pasta water if sauce is too thick. Mix well, cook, 1-2 minutes, until heated through. Top with dill leaves and freshly ground pepper.
